He studied cooking at the Escuela Pública de Hostelería de Santiago de Compostela. Javi Olleros belongs to a family of hotel tradition in O Grove, he inherited the trade of his father, a cook who emigrated to Switzerland, and the good work of his mother, owners of Hotel Mar Atlántico, in O Grove.

During the four months that the hotel was closed, Javier took the opportunity to do stages in kitchens here and there. He was at Casa Solla, at Toñi Vicente, with Arola at La Broche (Madrid), with Martín Berasategui, at Bica do Sapato (Lisbon), Balzac (Madrid), Zallo Barri (Gernika), and finishing his stages in the world of Seiji Yamamoto (Tokyo).
