Gastronomy
His training began at the Centro Superior de Hostelería de Galicia, after which he did internships at the Hotel Villamagna in Madrid and at Cenador de Salvador.
During the following years, he made stages in Tragabuches and El Bohío (both with Michelin star). He then joined the Villena restaurant in Segovia (one Michelin star), where he remained under the guidance of Julio Reoyo for more than two years at the head of the kitchen.
An important aspect of his career has been his participation on two occasions in the Chef of the Year Competition. The first time he won the Codorníu Aperitif Award; the second time, after winning the semifinal of Madrid and Castilla-La Mancha and the Codorníu Aperitif Award, he won third place in the final of Alimentaria 2012.
In February 2015 he started his personal project, La Tasquería de Javi Estévez, where he shows the Madrid public his commitment to the city and, above all, to the homemade cuisine that so well represents the people of Madrid. This initiative has earned him the Cocinero Revelación 2016 award at the Madrid Fusión international gastronomy congress, as well as a mention for Revelation Restaurant at the XIII Metrópoli Gastronomic Awards.
